A good hearty soup -- 2 cups is a serving.

Recipe Ingredients for Sunday Night Succotash

9 ounces Lima Beans, Large, Mature Seeds raw
32 ounces chicken stock
8 ounces whole kernel corn
2 T shallots
2 t salt
1 t pepper
2 ounces bacon
2 ounces lentils
2 ounces pearled barley

Recipe Directions for Sunday Night Succotash

  1. Soak lima beans overnight with lentils and barley.

  2. The next day -- about 2 hours before serving time -- Bring the stock to a boil and add the drained and rinced limas, barley and lentils. Simmer on med heat in a covered soup pot for 1 hour. Add water or additional stock to bring the volume back up, then add minced shallots, seasonings, corn.

  3. Fry the bacon crisp and draining it on a paper towel. (This will acutally lower the given calorie/fat count, but I couldn't find a listing for crisp fried and drained bacon...)

  4. Add the crumbled bacon to the pot, and simmer on low heat for another 45 minutes. Season to taste.
