All the healthy stuff, and great flavor. It fooled my son-in-law. He never knew he was eating health food.

Recipe Ingredients for Sunday morning waffles

1/2 cup egg whites
1/2 cup original egg beaters
1/2 cup 1% milk
1/4 cup golden flaxseed
2 oz oat bran (1/4 c)
1 cup Bob's Red Mill Low Carb baking mix
1 tsp baking powder
1 tsp vanilla

Recipe Directions for Sunday morning waffles

  1. Beat together the egg whites, egg beaters, and milk until foamy. Stir in the ground flaxseed, oat bran, baking mix, baking powder, and vanilla. Let batter rest 5 minutes.

  2. Preheat waffle iron. Spray or brush with a tiny bit of oil to prevent sticking. Set it on medium if you have that function.

  3. Pour about 1/2 cup batter on waffle iron and bake according to manufacturer's directions. Makes 7 waffles. May be used as dessert waffles if desired, topped with fruit and whipped cream.
