This recipe has been modified from a recipe found in Holly Clegg's Trim & Terrific Diabetic Cooking cook book. A 8 ounce can of tomato sauce has been added to the ketchup mixture that is spread over the meat. Egg substitute liquid was used instead of two egg whites.

Recipe Ingredients for Sunday Dinner Meat Loaf

1 2/3 pounds (27 ounces) 96% Lean Ground Sirloin - Uncooked
1/2 cup Egg Substitute, Liquid
1/2 cup fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon onion powder
1 teaspoon minced garlic
1 tablespoon worcestershire sauce
1/4 teaspoon dried thyme leaves
1/2 cup carrots, finely chopped or shredded
8 ounces (one cup) bread crumbs, plain or seasoned
8 ounces (one can) tomato sauce
1/3 cup ketchup
1 tablespoon honey
1 tablespoon Dijon mustard

Recipe Directions for Sunday Dinner Meat Loaf

  1. Preheat the oven to 350 degrees. in a large bowl, combine the beef, egg whites, milk, salt and pepper, onion powder, garlic, mustard, Worcestershire sauce, thyme, carrots, and bread crumbs, mixing well. Transfer the mixture to a nonstick 9 x 5 x 3-inch loaf pan and bake for 40 - 45 minutes.

  2. in a small bowl, combine the tomato sauce, ketchup, honey, and mustard, mixing well. Spread the sauce and ketchup mixture on the meat loaf and continue cooking for 15 - 25 minutes or until the meat is done (internal temperature 160 degrees). Remove the meat loaf from the oven, drain any excess grease, and serve
