Recipe Ingredients for Sun-dried tomato and black olive frittata

1 tbsp olive oil
1/2 garlic clove
1 tbsp basil, fresh
1 tbsp oregano, fresh
1/4 cup sun dried tomatoes
3 tbsp olives
6 eggs
1/3 cup feta cheese
1 tsp salt
1 tsp pepper

Recipe Directions for Sun-dried tomato and black olive frittata

  1. Place a rack in the upper third of the oven. Heat the oven to 350.

  2. Heat the oil in a 12 inch ovenproof non-stick skillet over medium low heat, then swish the garlic clove through the warm oil until the garlic begins to color. Remove the garlice and discard. Saute the basil, oregano, sun-dried tomatoes and olives until the tomatoes soften and begin to plump up, about 3 minutes. Spread the tomatoes and olives in a single layer in the pan.

  3. Lightly beat together the eggs and the cheese in a mixing bowl. Pour the eggs into the pan, and stir lightly with a fork until they start to set, about 2 minutes. Once the bottom is firm and set to about 1/3 inch, use a thin, non-metallic spatula to lift the frittata's edge closest to you. Tilt the pan slightly toward you so that the uncooked egg runs underneath. Lower the edge and swirl the pan gently to distribute the egg evenly.

  4. Continue cooking for about 40 seconds, then lift the edge again, repeating the procedure above until teh top - while still not set - is no longer runny, about 4 minutes.

  5. Place the skillet in the oven until the top of the frittata is set and dry to the touch, 2-4 minutes. Check each minute after two, because the frittata will turn tough if cooked too long.

  6. Run a spatula around the edges to loosen the frittata, and invert it onto a serving plate. Season to taste with salt and pepper.
