Sun-Dried Tomato and Basil Vinaigrette:

Recipe Ingredients for Sun-Dried Tomato and Basil Vinaigrette:

4 tomatos, sun-dried
1/2 c water
1/2 c chicken broth, low sodium, reduced Fat
2 tbsp olive oil
2 tbsp lemon juice
2 tbsp water
1 tsp garlic, minced
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Sun-Dried Tomato and Basil Vinaigrette:

Place toms & hot H2O in a small container. Let stand about 10-15 mins or until tomatoes are soft. Combine remaining ingredients in a container with a tight fitting lid. Drain H2O from tomatoes & add to other ingredients. Finely chop tomatoes, add to other ingredients & shake well. Refrigerate until to ready to use.
