This hummus featuring basil and sun-dried tomato is easy to whip up on a moment's notice.

Recipe Ingredients for Sun-Dried Tomato and Basil Hummus

15 oz white beans (drained and rinsed; liquid reserved)
1/2 cup chopped sun-dried tomatoes (not oil packed)
3 cloves garlic
1/4 cup chopped fresh basil
1/4 cup grated Parmesan cheese
1/4 cup olive oil
1 dash salt (or to taste)
1 dash pepper (or to taste)

Recipe Directions for Sun-Dried Tomato and Basil Hummus

  1. 1. Grind the white beans, sun-dried tomatoes, garlic, basil and Parmesan cheese together in a food processor for 15 seconds.

  2. 2. Add about 1/4 of the reserved bean liquid; grind another 15 seconds. Pour in enough additional liquid, a small amount at a time, and grind; repeat until the consistency is like chunky peanut buttr.

  3. 3. Pour in olive oil; grind for an additional 15 seconds. Season with salt and pepper to taste.
