Recipe Ingredients for Summer Zu-Squash

1/4 cup nonfat yogurt
1 teaspoon cornstarch
2 tablespoons skim milk
1/4 teaspoon caraway seeds
1/8 teaspoon dry mustard
1 pinch of black pepper
1 cup yellow squash, sliced
1 cup zucchini, sliced
1 cup fresh mushrooms, sliced

Recipe Directions for Summer Zu-Squash

  1. In a small bowl, stir together yogurt and cornstarch. Stir in the milk, caraway seeds, mustard and pepper. Set the mixture aside.

  2. Spray a large unheated skillet with nonstick spray. Heat the skillet over medium high heet. Add the yellow squash and zucchini. Cool and stir for 2 minutes, then add the mushrooms. Cook and stir for 2-3 minutes more or until the vegetables are crisp-tender.

  3. Stir in the yogurt mixture. Cook and stir until the mixture thickens and begins to gently boil. Cook and stir for 2 mintues more. Remove from heat and cool to serve.
