Pasta with summer vegetables and mozzarella

Recipe Ingredients for Summer Vegi Pasta

4 ounces pasta
1 1/2 tablespoons olive oil
2 cups eggplant
1 cup zucchini
1 cup yellow squash
1 cup basil
4 ounces fresh mozzarella
1 teaspoon salt
1 teaspoon pepper
2 cloves garlic
1 cup fresh tomato
4 tablespoons balsamic vinegar
2 tablespoons grated cheese

Recipe Directions for Summer Vegi Pasta

  1. Warm chopped garlic in 2 tablespoons olive oil.

  2. Place chopped vegetables in pan with garlic on medium heat.

  3. Bring salted pasta water to a boil.

  4. Sprinkle vegetables with salt and pepper.

  5. Add balsamic vinegar to vegetables and increase heat.

  6. Cook pasta.

  7. Add tomatoes and basil to vegetables and warm.

  8. Add cooked pasta and stir.

  9. Place fresh mozzarella over pasta in bowl.
