A simplified version with lower sodium and oil of the Cook's Illustrated original.

Recipe Ingredients for Summer Vegi Gratin

530 g Onion
4 tbsp Olive Oil
725 g Zuchinni
700 g Yellow Squash
9 g garlic
3/4 tspn black pepper
1 tbsp dried thyme
584 g Tomato
65 g Whole Wheat Bread
86 g Shallots
33 g Parmesan Cheese
1/4 c fresh basil leaves

Recipe Directions for Summer Vegi Gratin

  1. Half the onions lengthwise and thin slice from pole to pole, julianed style. Saute in 1tbsn oil seasoned with a bit of pepper. Stir occasionally until soft and golden brown carmelized state. About 20-25min.

  2. Combine chopped garlic, 3tbsn oil, 1/2 tsp pepper and 1tbsn Thyme. Fresh is best, but dried works, in a small bowl and mix.

  3. Slice Zuchinni and Summer Squash and toss with half the oil mixture in a large bowl. Arrange in bottom of oiled 13x9 baking dish. Arrange caramelized onions in even layer over squash.

  4. Slice tomatoes 1/4" thick and slightly overlap slices in a single layer on top of onions. Spoon remaining garlic-oil mix evenly over tomatoes.

  5. Bake in 400deg oven until tender and tomatoes staret to brown on edges. 40-45 minutes.

  6. Process bread in food processor till finely ground. (about 1 cup) Combine bread crumbs, last tbsn oil, chopped shallots and parmesan cheese in medium bowl.

  7. Remove baking dish from oven and increase temp to 450deg. Sprinkle bread mix evenly on top of tomatoes. Bake gratin until bubbling and lightly browned. About 5-10 minutes. Sprinkle with chopped fresh Basil and let set at room temp 10 minutes before serving.

  8. This will be a pretty wet dish. I usually drain off as much liquid as I can before topping with the Basil. I reserve the liquid to use as a vegitable stock. Or just eat it in a bowl!
