Recipe Ingredients for Summer Veggies w/ Italian seasoning

3 tbsp olive oil
1 green bell pepper
1 red bell pepper
2 zucchini
1 yellow squash
1 eggplant
1 onion
1 tbsp basil
1 tbsp rosemary
1 tbsp thyme
1 tbsp marjoram
1 clove garlic
1 tbsp celery seed

Recipe Directions for Summer Veggies w/ Italian seasoning

  1. Wash and chopped all veggies.

  2. Place chopped eggplant in a colander and sprinkle with salt, let stand while prepping other veggies.

  3. Pour 3 tbsps olive oil in skillet & add onion, chopped garlic & peppers.Saute until onions are clear.

  4. Rinse & squeeze excess water from eggplant & then add to skillet.

  5. Add all the other seasonings.

  6. Add the rest of the chopped vegetables & cook until tender.

  7. Can be served with rice as a main dish or as a side dish with any entre
