Recipe Ingredients for Summer Veggie Tostada Topping

1 serving Ground Cumin
1 tsp Salt, Table
1 tsp Pepper, Black
2 Grapeseed Oil
1 cup Black Beans, Organic
1 medium White Onion
1 cup Corn, Sweet, Yellow
1 Squash, Summer, Crookneck And Straightneck
4 oz Green Salsa
1 Swiss Cheese
1 Swiss Cheese
1 cup Water
1 tbsp Cream, Sour, Reduced Fat, Cultured

Recipe Directions for Summer Veggie Tostada Topping

  1. 1. Preheat broiler.

  2. 2. Combine spice ingredients, stirring well. Heat oil in a large nonstick skillet over medium-high heat. Add onion, corn, beans, and squashi to pan; sauté for 10 minutes or until squash is cooked. Sprinkle the spice mixture evenly over the veggie mixture. Stir in salsa. Cook 2 minutes or until liquid almost evaporates, stirring frequently.

  3. 3. Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheet; lightly coat tortillas with cooking spray. Broil 3 minutes or until lightly browned. Spoon about 3/4 cup veggie mixture in the center of each tortilla; sprinkle each serving with 1/4 cup cheese. Serve immediately.
