A delicious, nutritious soup that will make enough meals for several weeks. Serving size is 1 cup of soup.

Recipe Ingredients for Summer Veggie Soup #2 (6-7-09)

1/4 cup olive oil
2 cups onions, diced
2 cups cauliflower, cut into flowerettes
3 cups mushrooms, sliced (split into 2)
3 cups red cabbage, (2 c. for food processor, 1 c. sliced into strips)
2 cups carrots, sliced (split)
4 cups celery, sliced (3c, 1-1/2 c. split)
3 cups potatoes, sliced
3 cups broccoli
2 cups green cabbage
342 grams boca ground crumbles , 3 cups
2 cups tomatoes diced , (S&W organic)
3/4 teaspoon salt
1 teaspoon pepper
14 cups water

Recipe Directions for Summer Veggie Soup #2 (6-7-09)

  1. Pour 1/4 cup of olive oil into large kettle

  2. heat oil

  3. saute 2 cups onions until soft

  4. Add 1-1/2 cups mushrooms and saute for another 5 minutes (you can also add several cloves of garlic at this time)

  5. place the following in a food processor and grind until small bits:

  6. 1 cup red cabbage

  7. 1 cup carrots

  8. 3 cups celery (use tops and leave and tough parts of celery)

  9. 1 cup potatoes

  10. 1 cup broccoli (use stem and leaves)

  11. Add 8 cups water to sauteed onions and mushrooms and then add the processed vegetables.

  12. Add can of tomatoes.

  13. Bring to a boil and simmer for 10 minutes.

  14. Meanwhile, slice the remainder of the vegetables into bite size pieces.

  15. Add as follows:

  16. carrots (1 cup); potatoes (2 cups); celery (1-1/2 cups); water (6 cups)

  17. simmer 10 minutes, then add:

  18. green cabbage (2 cups); red cabbage (1 cups); mushrooms (1-1/2 cups)

  19. simmer 10 minutes, then add:

  20. broccoli (2 cups); cauliflower (2 cups).

  21. simmer 5 minutes

  22. add boca crumbles

  23. add 2 Tablespoons nutritional yeast

  24. add seasonings to taste

  25. simmer 5 more minutes

  26. enjoy!
