A crunchy salad filled with summer veggies, and some bacon. This makes a great lunch on its own, or can also serve as a side.

Recipe Ingredients for Summer Veggie Orzo Salad

10 oz Orzo
10 oz Ranch dressing
1 red bell pepper
1 cucumber
2 bacon
2 roma tomato

Recipe Directions for Summer Veggie Orzo Salad

  1. Cook Orzo to desired tenderness, and cool by running under cold water.

  2. Cook Bacon and drain on paper towel.

  3. Dice Red Bell Pepper, Cucumber, Roma tomato in bite size pieces.

  4. Place all ingredients in a bowl, add Ranch dressing,mix well.

  5. Refrigerate for two hours.
