Recipe Ingredients for Summer Veggie Mix

2 cups zucchini
1 cup onion
1 1/2 cups portabella mushrooms
1 tbsp vinegar
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp pepper

Recipe Directions for Summer Veggie Mix

  1. cube the zucchini and mushrooms, slice the onion

  2. add the zucchini and onions to a bowl with vinegar, olive oil let sit for 15 minutes

  3. put into a skillet on medium heat, add mushrooms and simmer until desired level of softness is reached
