3 small zucchini
2 small yellow squash
12 tomatoes
1 green bell pepper
1 red bell pepper
2 cloves garlic
1 small onion
1 tsp. oregano
1 tbsp. olive oil

  1. Heat olive oil in a large dutch oven.

  2. Add green and red bell peppers.

  3. After a few minutes, add the remaining vegetables and oregano.

  4. Cook on medium heat until everything is tender and flavors blend. Eat warm or cold. Good with Parmesan cheese sprinkled on top, or over rice.
