Good dish for getting rid of extra vegetables.

Recipe Ingredients for Summer Vegetables and Pasta

1 tbs olive oil
1 tbs garlic scapes
1 tbs green onion
1 cup green beans
1/2 cup broccoli
2 cups zucchini
2 cups yellow squash
1 cup cherry tomatoes
1/2 cups Ricotta cheese
8 cups macaroni
1 Salt and pepper to taste

Recipe Directions for Summer Vegetables and Pasta

  1. Heat olive oil in a skillet. Saute garlic scapes and green onions.

  2. Add green beans and saute.

  3. Boil pasta in separate pot.

  4. Add broccoli, zucchini, and squash to olive oil. Continue cooking and stirring until vegetables are al dente.

  5. Drain pasta. Add to vegetables.

  6. Add Ricotta cheese. Thin with extra pasta water if needed. Stir until entire mixture is heated all the way through.
