Recipe Ingredients for Summer vegetable stew

1 fennel bulb
1 T olive oil
3 c chicken broth, low sodium
14 1/2 oz diced tomatoes, italian style
1 1/2 cups carrots, baby, halved
1 1/2 cups green beans
2 T thyme, fresh
1/2 t pepper
1 c peas
2 oz goat cheese, crumbles

Recipe Directions for Summer vegetable stew

  1. Rinse fennel well and trim and reserve fronds. Mince fronds, and reserve 1 T. Trem tough outer leaves and discard. Cut bulb in half lengthwise, and discard core. Cut bulb crosswise into 1/4 inch slices; set aside

  2. Heat olive oil in Dutch oven over medium heat. Add fennel and saute 5 minutes. Stir in broth and next 5 ingredients. Bring to a boil over high heat Cover, reduce heat and simmer 15 minutes. Stir in peas and reserved fennel fronds; cover and simmer 2 minutes

  3. Ladle 1 1/4 cups stew into each of 4 bowls; top with polenta rounds and sprinkle with cheese.
