A light summer stew made with loads of veggies! To me this is not much of a stew, more like veggies in a light sauce, as there wasn't enough liquid in the recipe to be a soup or stew. Nevertheless, it is tasty! I slightly modified the recipe (a little less corn, a different cheese topping) based on what I had readily available.

Recipe Ingredients for Summer Vegetable Stew

1 cup chopped raw White Pearl Onions
2 cup, chopped Carrots
4 fl oz Organic Free Range Chicken Low Sodium Broth
2 tbsp Vinegar red wine
2 serving Premium Selection Italian Seasoning
1 tsp Fennel Seed
1 cup Corn, Sweet, Yellow
1 large Squash, Summer, Zucchini, Includes Skin
15.5 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
4 oz Light Cream
1.5 oz Cornstarch
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
