Recipe Ingredients for Summer vegetable/rice Dish

3 cups cooked white rice
2 eggs
3/4 cup teriyaki sauce
3/4 lb chicken breast
1 medium red onion
1 large red pepper
10 oz sugar peas
1/4 cup honey
1 T olive oil

Recipe Directions for Summer vegetable/rice Dish

  1. Scramble 2 eggs and set aside

  2. Cook 1 1/2 cups white rice (results in 3 cups cooked rice) and set aside

  3. Chop raw chicken in to bite-sized pieces and cook in 1/4 cup teriyaki sauce and 1/8- 1/4 T until sauce begins to caramelize.

  4. Chop onions and red pepper and stir fry for 3-5 minutes in a different pan.

  5. Add sugar peas and stir fry for another 2-3 minutes.

  6. Add in eggs, rice, meat, and 1/2 cup teriyaki sauce and 1/4 cup honey and mix, cooking until dish is warmed all the way through.
