Recipe Ingredients for Summer Vegetable Medley

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 large Squash, Summer, Zucchini, Includes Skin
32 oz Mushrooms
2 cup Diced Tomatoes
3 clove Garlic
1.5 oz Extra Virgin Olive Oil

Recipe Directions for Summer Vegetable Medley

  1. Heat oil in pan, add chopped garlic, saute.

  2. Add cubed eggplant and zucchini - saute.

  3. Add 2 cans of diced tomatos, simmer till al-dente.

  4. Add salt, pepper, fresh herbs to taste.
