Eggplant, squash, onion, tomato pie

Recipe Ingredients for Summer vegetable gratin

1 small eggplant
1 large yellow squash
1/2 large onion
1 large tomato
8 basil leaves
4 tsp grated parmesan
1/2 tsp ground black pepper
1/3 tsp canola oil
1 T dried bread crumbs

Recipe Directions for Summer vegetable gratin

  1. Preheat oven to 350 F.

  2. Thinly slice vegetables.

  3. Prepare chiffonade of basil leaves.

  4. Layer vegetable, 1 tsp parmesan, pepper.

  5. Top with bread crumbs.

  6. Cover with aluminum foil, cook 30 minutes.

  7. Uncover, raise heat to 375 F, cook 15 minutes.

  8. Let sit at least 15 minutes to set.

  9. Slice and serve.
