Recipe Ingredients for Summer Vegetable Bake

1 c zucchini
1 c red pepper, sweet
1/3 c onion
1 c squash, yellow
1 c tomato
1/4 c Parmesan cheese
3/4 c bread crumbs

Recipe Directions for Summer Vegetable Bake

  1. Spray 9x9 inch glass baking dish with non-stick cook spray.

  2. Layer the sliced veggies in the dish.

  3. Top with tomatoes (sauced if possible) and then cheese and bread crumbs.

  4. Bake at 350 for 30-40 minutes.
