A showcase for delicious summer vegetables. Use fresh thyme if you have it!

Recipe Ingredients for Summer Succotash

2 t olive oil
1 1/2 c onion, chopped
2 cloves garlic, minced
2 cups lima beans
2 1/2 cups corn kernels
2 small zucchini, diced
1 pint grape tomatoes, halved
1 t dried thyme
1/2 cup chicken broth

Recipe Directions for Summer Succotash

  1. Heat a large skillet over medium heat and add the olive oil.

  2. Add the onions, saute for about 2 minutes, until translucent.

  3. Add the garlic, saute for 1 minute, until fragrant.

  4. Add the remaining vegetables and thyme, saute for a few minutes.

  5. Add chicken broth, cover, and cook for 7 - 10 minutes, until vegtables are softened.
