Recipe Ingredients for Summer Succotash & Lemony Rice

1 c arborio rice
2 tbsp extra-virgin olive oil
3 tbsp fresh lemon juice
3 pinches fine sea salt
2 pinches freshly ground pepper
1/2 c fresh tomato, large diced
2 tbsp basil, chopped
1 tbsp butter (recipe calls for Earth Balance Vegan butter for vegan version, I just used regular.)
1 tsp olive oil
1 c red onion, diced
1 garlic clove, minced
10 oz frozen baby lima beans, thawed
1 c fresh or frozen corn (thawed)
1 c campari tomotes, chopped (recipe calls for cherry but there were none available when I went shopping)
2 tbsp parsley, chopped
2 tbsp basil, chopped
1 tbsp red balsamic vinegar
