Recipe Ingredients for Summer Stacker

1 large ripe tomato
4 slices zucchini
1/2 oz goat cheese, soft
1 scallion, thinly sliced
1 tbsp italian dressing
2 tbsp fresh basil
2 cups lettuce

Recipe Directions for Summer Stacker

  1. Layer tomato, zucchini, goat cheese, scallion, zucchini, tomato. Make two stacks.

  2. Serve each on bed of lettuce. Drizzle with italian dressing and sprinkle with basil.
