Recipe Ingredients for Summer Squash Stir Fry Medley

4 cup, chopped Squash, Summer, Zucchini, Includes Skin
4 cup, sliced Squash, Summer, All Varieties
1 serving Fresh vidalia onion (1 md)
4 medium Carrots, Baby
28 2/5 grams Mushrooms, Portabella
2 clove Garlic
0.07 cup Parsley
1 tbsp Rosemary, Fresh
1 oz Oregano
5 sprigs Dill Weed, Fresh
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 serving Extra Virgin Olive Oil

Recipe Directions for Summer Squash Stir Fry Medley

Slice all vegetables into uniform pieces. Heat olive oil to hot in a large wok. Add squash and carrots and stir fry about 7 minutes (until almost soft). Add onion, mushrooms, garlic and continue to stir fry until onion is soft and veggies are cooked. Wedge the tomatoes and add along with the herbs (which should be chopped). Put a small amount of salt and a good helping of pepper on top and stir well. Heat until tomatoes are warm. Can top with freshly grated Parmesan cheese (about a tsp. per serving).
