Good for someone with a big appetite; you can eat a bunch for very little calories and it's good with chicken breast. I buy breast cutlets and throw them in the same pan to saute after the squash is done.

Recipe Ingredients for Summer Squash Saute

4 cups summer squash
1/2 onion
6 mushrooms
1 tomato
2 T parmesean cheese, grated

Recipe Directions for Summer Squash Saute

wash, slice, combine squash onion and mushrooms in pan with PAM and cook till soft, turning occasionally. Use more PAM as you need it. When it starts getting done and a little color to it, add mushrooms. When mushrooms get done, add a little tomato if you like it. When it's all done, sprinkle a little parmesean and black cracked pepper.
