Very light lunch or dinner for a hot summer day

Recipe Ingredients for Summer squash

1152 gram squash
100 gram onions
80 gram peppers, sweet yellow
450 gram tomatos
1 cup dill
1 cup parsley
1/2 tsp salt
1/2 cup Low Fat Sour Cream
1 tbsp vegetable oil

Recipe Directions for Summer squash

  1. Saute the onion

  2. Add chopped tomatos and peppers

  3. Clean the white squash free it from seeds and cut it up into cubes.

  4. Add squash to the pot

  5. Add 2 cups of water, salt.

  6. Cover it and let it simmer.

  7. Once all veggies are tender add the chopped dill and parsely.

  8. Let it cool some and add the sour cream.

  9. You can serve it with rice if you find it too light.
