Good for breakfast with fruit or for dinner with a salad. Could also make with reduced fat Bisquick and half the amount of oil.

Recipe Ingredients for Summer Squash Pie

1/2 cup Parmesan cheese
1 cup Bisquick
1 t parsley, chopped
3 cups summer squash, grated
1/2 cup oil
4 eggs, beaten
1 medium onion, grated

Recipe Directions for Summer Squash Pie

Combine all ingredients in a bowl. Pour into a 10" pie plate. Bake at 350 degrees for 35-45 minutes, until brown and bubbly on top.
