Recipe Ingredients for Summer Squash Pancakes

2 medium Squash, Summer, Zucchini, Includes Skin
0.25 cup, grated Carrots
1 cup(30 g) Spinach
0.25 medium raw Bell Pepper Green
0.5 cup Chickpea Flour (Besan)
0.5 tsp Salt, Table
0.5 tsp Oregano, Ground
1 dash Pepper, Black
0.06 tsp Cayenne

Recipe Directions for Summer Squash Pancakes

  1. 1) Mix all vegetables and spices in a medium sized bowl.

  2. 2) Mix in chickpea flour. Allow chickpea flour to absorb the vegetables? moisture for about 5 minutes.

  3. 3) Heat a large frying pan or skillet over medium heat & spray oil.

  4. 4) Drop squash mix by rounded (table)spoon into skillet, flattening and shaping with spoon.

  5. 5) After roughly 1-2 minutes, use a spatula to carefully flip each pancake.
