Recipe Ingredients for Summer Squash Gratin

2 medium squash
2 medium zucchini
2 medium tomatoes
3 cloves garlic, finely minced
0.67 cup mozzarella cheese, shredded
1/4 cup fresh basil,chopped
1 T kosher salt
1 T black pepper
1 1/2 tsp olive oil

Recipe Directions for Summer Squash Gratin

  1. Mix 1 tsp each of oil,kosher salt,and black pepper.

  2. Slice zucchini and squash into 1/4" slices.Coat with half of the oil mixture and grill or broil until medium-crispy.

  3. Meanwhile, slice tomatoes into 1/4" slices as well.Coat with the rest of the oil mixture and drain in a single layer above sink 20-30 min.

  4. Peheat oven to 350* at this point.

  5. Heat a small skillet and saute garlic in 1/2 tsp of oil.Combine with basil,1/2 cup of the cheese,and remaining salt and pepper, and mix well.

  6. Spray an 8x8 baking dish and layer the squash and zucchini "chips", allowing them to slightly overlap, with garlic mixture until you run out.Layer tomatoes on top, and sprinkle with remaining cheese.

  7. Bake for 25 min.,and then broil for 5 more.Watch closely while broiling!& enjoy!
