Summer Squash Gratin Recipe

Layers of roasted vegetables, topped with a crunchy crust

Recipe Ingredients for Summer Squash Gratin

4 squash
4 yellow squash
2 onions
3 tomatoes
2 slices whole wheat bread
2 tbsp parmesan cheese
1 tbsp butter
1 tbsp olive oil

Recipe Directions for Summer Squash Gratin

  1. Wash and slice squash into slices about 1/4 inch thick. Arrange on cookie sheet and roast at 400 degrees until they start to dry out.

  2. Slice onions thinly and carmelize in a skillet while the squash are roasting in the oven.

  3. Slice a few ripe tomatoes (enough to cover the top of the casserole dish).

  4. Place a layer of squash on the bottom of the casserole dish. Layer on the onions. Add another layer of squash (different color). Layer on the tomatoes. Top with a topping of the toasted bread, crumbled with the parmesan cheese. Dot with butter and bake until the topping is browned and crispy.
