Tasty late-summer soup. Original recipe called for 1/3 cup cannellini beans, but my beans didn't soften after 10 hours, so I didn't eat them. Can top with grated parmesan and serve with toast for a nice meal.

Recipe Ingredients for Summer Squash Crockpot Soup

4 cups chicken broth (vegetable stock is fine!)
1 cup pasta sauce
1 cup water
1 medium yellow onion, diced
4 zucchini, washed well and sliced in 1/4-inch rounds
2 cups cherry tomatoes, halved
1 tablespoon Italian seasoning
3 oz penne
1 tsp salt
1/2 tsp pepper

Recipe Directions for Summer Squash Crockpot Soup

  1. Put onion, zucchini, and tomatoes in crockpot.

  2. Add chicken broth, pasta sauce, water, and Italian seasoning.

  3. Add washed beans if using.

  4. Cook on low 8-10 hours.

  5. In last 20 minutes of cooking, add pasta.

  6. Season to taste with salt and pepper, and serve with cheese.
