Recipe Ingredients for Summer Squash and Corn Soup

5 small Squash, Summer, All Varieties
2 ears corn
40 g shallot
2 tablespoons olive oil
2 cups Natural Free Range Chicken Broth
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups half and half

Recipe Directions for Summer Squash and Corn Soup

  1. Directions

  2. ?In a large saucepan, saute squash and onions in butter until tender. Stir in the broth, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender.

  3. ?Cool slightly. Process in batches in a blender; return all to the pan. Stir in cream and heat through. Yield: 6 servings.
