Summer Squash Casserole Recipe

Yummy way to use up squash and zucchini during the summer.

Recipe Ingredients for Summer Squash Casserole

4 lbs Summer Squash
1 small white onion
2 scallions
1 cup cheddar cheese
2 eggs
3/4 cup skim milk
100 g ritz crackers
3 tbs butter

Recipe Directions for Summer Squash Casserole

  1. - preheat oven to 350 degrees

  2. - wash & chop squash and onion/scallions

  3. - steam in dutch oven or skillet for 2-3 min until slightly tender

  4. - meanwhile crush ritz crackers and mix with cheese

  5. - add 1/2 of cracker mixture to steamed veggies

  6. - transfer mixture to baking pan

  7. - beat eggs and milk lightly and then pour over squash

  8. - spread remaining crackers and cheese over top

  9. - melt butter and pour over total baking pan

  10. - bake for 35-45 min
