Recipe Ingredients for Summer squash casserole

1 squash, summer (or a few zucchini, diced)
1 large onion, diced
2 cups sliced mushrooms
2 bell peppers, diced
14 oz (400g) canned tomatoes
3 tbsp tomato paste
1 tbsp honey
2 tsp mustard
2 cloves garlic
1 dash of thyme, sage and sprinkle of nutmeg
2 oz (60g) cheddar cheese
1 Salt and pepper to taste

Recipe Directions for Summer squash casserole

  1. 1) Heat some oil or spray a heavy, oven safe pan. Fry the onion and garlic for 3 minutes until soft.

  2. 2) Add the rest of the vegetables and cook on a high heat, stirring until all are fairly soft. While stirring, add the tomato paste, honey, herbs and spice.

  3. 3) Once all the vegetables are cooked, add the canned tomato. Bring to the boil, then reduce heat to a simmer and leave for ten minutes, partially covered.

  4. 4) Sprinkle the cheese on top, and place the casserole into a pre-heated oven at 190C (around 365F?) for half an hour.

  5. 5) Serve with carb of choice and enjoy! Serves 4-ish depending on appetites!

  6. Serve with a side of couscous, salad, ect.
