Great way to use all your summer squash. Makes a great side dish. Use any fresh Italian herb you have or like. Basil, Oregano, Parsley or Chives work great.

Recipe Ingredients for Summer Squash Casserole

2 small zucchini, sliced
2 small yellow squash, sliced
1 cup sliced mushrooms
1/2 cup red onion, chopped
14 ounce artichokes, drained and chopped
14 ounce diced tomatoes, italian style
2 tablespoons grated parmesan cheese
2 tsp fresh herbs, chopped
1 cup lowfat mozzarella cheese, shredded

Recipe Directions for Summer Squash Casserole

Mix all ingredients except mozzarella cheese and 1 tsp of fresh herbs in a casserole dish. Bake at 350 for approx. 20 min. or until veges are tender crisp. Sprinkle Mozzarella and remaining fresh herbs over top and bake until cheese is melted.
