Recipe Ingredients for Summer Squash Casserole

3 cups summer squash
1 onion
1 bell pepper
1/2 cup cheddar cheese
15 (48g) crackers
2 eggs
1 salt
1 pepper
1 clove garlic
1/2 tsp. tarragon
1 T. butter

Recipe Directions for Summer Squash Casserole

Boil cubed squash until tender. Saute onion and bell pepper. Combine squash, onion, bell pepper, cheese, beaten eggs, crushed crackers, salt pepper, minced garlic, tarragon. Pour into a buttered casserole dish. Bake at 350 degree oven for 45 minutes.
