Recipe Ingredients for Summer Squash casserole

1/2 cup green bell pepper, chopped
2 ounces onion, diced
2 cups summer squash
7 ounces canned diced tomatoes
1 tbs tomato paste
1/2 cup brown mushrooms
2 ounces shredded cheddar cheese
1 dash of hot sauce
1 tsp honey
1/2 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Summer Squash casserole

  1. Cook the peppers and onions in a medium skillet for about 5 minutes or until soft. Add zucchini, mushrooms, tomato paste mixed with seasonings. Cover and cook over medium heat for about 10 minutes or until zucchini is tender. Salt and pepper then sprinkle with cheese. Continue cooking until cheese is melted.

  2. Corn may be added with the cheese.
