Delicious creamy casserole made with summer squash. Perfect way to use up all that squash and makes a great side for a cookout!

Recipe Ingredients for Summer Squash Casserole

900 grams Squash, Summer, All Varieties
0.5 cup Butter
8 oz Herb Seasoned Stuffing
8 oz Sour Cream
0.5 cup, chopped Onions
2 medium Carrots

Recipe Directions for Summer Squash Casserole

  1. Preheat oven to 350

  2. Slice and cook squash until tender, but firm. Melt butter and mix with stuffing. Pat 1/2 of the stuffing into 9 x 13 inch baking dish. Mix chicken soup, sour cream, onions and carrots to squash and spoon over crumbs. Add remaining crumbs to top of mixture. Bake 45 mins. Serve hot.
