Recipe Ingredients for Summer Squash Casserole 5

2 cup,+sliced summer squash
1 large zucchini, diced
1/2 pound sliced fresh mushrooms
1 cup chopped onion
2 tablespoons olive oil
8 ounces shredded cheddar cheese,shredded
10 ounces condensed cream of mushroom soup, undiluted
3/4 ounce condensed cream of mushroom soup, undiluted
1/2 cup sour cream, reduced fat
1/2 teaspoon salt
75 g butter-flavored crackers, crushed (about 25 crackers) (1 cup)
1 tablespoon butter, melted

Recipe Directions for Summer Squash Casserole 5

  1. In a large skillet, saute the summer squash, zucchini, mushrooms and onion in oil until tender; drain.

  2. In a large bowl, combine the vegetable mixture, cheese, soup, sourcream and salt. Transfer to a greased 11-in. x 7-in. baking dish. Combine cracker crumbs and butter. Sprinkle over vegetable mixture.

  3. Bake, uncovered, at 350 for 25-30 minutes or until bubbly.

  4. Yield: 10 servings. Prep: 20 min. Bake: 25 min.
