Summer squash and brown rice casserole

Recipe Ingredients for Summer squash and brown rice casserole

2 cups brown rice
5 cups zucchini
1 cup light sour cream
2 eggs
8 ounces mozzarella cheese
3 ounces parmesan cheese
2 cups onion
2 cups celery
2 cups carrots
1 tablespoon olive oil

Recipe Directions for Summer squash and brown rice casserole

Separately make brown rice, let cool a bit. In large pot saute veggies (all chopped) with the olive oil until just tender. Remove from heat. Add in sour cream, cheese, eggs, rice, stir well to combine. Press into 13x9 glass pan and top with parmesan. Bake at 350 F for about 40-50 min.
