Use shredded yellow summer squash

Recipe Ingredients for Summer squash bread

3/4 c eggbeaters
2 c sugar
1 c canola oil
2 tsp vanilla
2 c all purpose flour
1 c whole wheat flour
3 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
2 c summer squash

Recipe Directions for Summer squash bread

  1. Blend eggbeaters, sugar, oil, and vanilla.

  2. Gradually add flour, baking powder, and spices.

  3. Mix in shredded squash.

  4. Bake at 325 F in large loaf pan 45 minutes or until toothpick comes out clean.
