Versatile squash recipe that can easily be enlarged to serve for a family dinner. Definitely comfort food at its best!!!

Recipe Ingredients for Summer Squash Bake

1 pound summer squash, yellow, chopped
1/4 cup water
1/4 cup chopped onion
1/2 teaspoon salt
1 egg, beaten
1/4 cup dry bread crumbs
2 tablespoons butter, melted
1/8 tsp pepper or to taste
1/2 cup shredded cheddar cheese

Recipe Directions for Summer Squash Bake

  1. In a saucepan, combine the squash, water, onion and salt. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until squash is tender. Remove from the heat; cool.

  2. Stir in the egg, bread crumbs, butter and pepper. Transfer to a greased 1-qt. baking dish; sprinkle with cheese. Bake, uncovered, at 350 for 30 minutes or until heated through and the cheese is melted.

  3. Yield: 2 servings.
