1 pound summer squash, yellow (about 2 small)
1/2 apple, tart
1 cup chicken broth, low sodium
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1 tablespoon minced chives or parsley

Recipe Directions for Summer Squash with Apple

  1. trim ends from squash and cut into thin slices. Core apple and cut into thin slices.

  2. In a medium saucepan, combine squash, apple, chicken broth, salt, pepper, nutmeg. Cook until squash and apple are tender, 6 to 8 minutes. Garnish with chives or parsley before serving.
