Asparagus and various greens make for a light soup, great for an appetizer or with a big chunk of crusty bread.

Recipe Ingredients for Summer Soup

2 tbsp margarine
1 medium onion
77 g asparagus
86 g lettuce
1 clove garlic
1/4 c flour
4 c water
4 tsp chicken bouillon

Recipe Directions for Summer Soup

  1. Melt butter and satuee onions, garlic (chopped fine) and asparagus until onions are clear and asparagus slightly soft.

  2. add water and bouillon.

  3. cook for a few minutes.

  4. add lettuce (i use spring mix and some fresh basil, really, whatever i have on hand). Cook for 2-4 minutes.

  5. put into blender in small batches to blend.

  6. enjoy!
