4 oz extra firm tofu
1 tsp olive oil
1 salt and pepper
28 g whole wheat pita (4in diameter)
1/4 cup avocado, diced
2 tbsp hummus
1/2 cup alfalfa sprouts
15 g tomato (1 thin slice)

  2. heat oil in frying pan over medium high heat

  3. cook tofu until golden and hot

  4. assemble rest of sandwich

  5. eat
