Mix of fresh cucumber, tomato, onion and garbanzo beans in light lemon dressing.

Recipe Ingredients for Summer Salad

1 cucumber, sliced
2 tomatoes, diced
1/4 c. red onion, sliced
15 oz. Garbanzo beans, drained, rinsed
1/3 c. feta cheese, crumbled
3 tbsp. olive oil, extra virgin
2 tbsp. lemon juice
1 salt and pepper to taste

Recipe Directions for Summer Salad

  1. Peel, slice and quarter cucumber

  2. Dice tomatoes

  3. Thinly slice the onion

  4. Drain and rinse beans

  5. Put ingredients in a bowl and drizzle with olive oil and lemon juice

  6. Mix well, salt and pepper to taste and chill

  7. *Can also add pine nuts and/or kalamata olives
