Recipe Ingredients for Summer risotto!

250 g rice
300 g eggplant
350 g zuchinis
1/4 cup oil
2 tomatoes
2 peppers

Recipe Directions for Summer risotto!

  1. We cut all vegetables into cubes. We stir them in the oil. We add the rice and then hot water and we boil until the rice is done.

  2. We serve with parmezana or kefalotiri cheese!
