great fresh salad, use your left over rice and chicken breast. Great with what ever vegetables you have!

Recipe Ingredients for Summer Rice Salad

2 cup Rice Jasmine
1/2 breast, bone and skin removed Chicken, Breast, Meat Only
1/2 cup, chopped Peppers, Sweet, Red
2 ear, yields Corn, Sweet, Yellow
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Coriander Leaves
2 medium Tomatoes
1 fruit without skin and seeds Avocados
1 oz Juice
1/2 tsp Pure Sesame Oil
3 tbsp Oil Olive Extra Virgin
1 tsp Pepper, Black
1/4 tsp Pepper, Red Or Cayenne
4 cups Mix Spring A Blend of Seasonal Greens

Recipe Directions for Summer Rice Salad

  1. Mix cooked rice, tomato, chicken, corn, peppers, scallions, and cilantro (coriander leaves) in large bowl.

  2. Mix lime juice with oils and peppers to emulsify. Pour over rice mixture.

  3. Serve over salad greens and top with 1/4 sliced avacado per serving.
